Description
Grilled Greek chicken salad is loaded with Mediterranean flavors and perfectly grilled chicken. Prep the chicken and dressing in advance for easy meals during the week.

Greek Dressing
- 1/3 cup Extra virgin olive oil
- 1/4 cup red wine vinegar
- Juice of 1/2 a lemon
- 1 small garlic clove, minced
- 1 teaspoon Dijon or spicy brown mustard
- 1 teaspoon dried oregano
- Salt and pepper to taste
Grilled Greek Chicken Salad
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon avocado oil
- Salt and pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon turmeric
- 2 teaspoons dried oregano
- 6 cups mixed greens
- 1 cup tomato, diced
- 1 cup cucumber, diced
- 1/2 small red onion, sliced
- 1/4 cup Kalamata olives
- 1/4 cup Pepperoncinis, sliced
Instructions
- Add dressing ingredients to a mason jar and shake well to combine.
- Drizzle the chicken with avocado oil and season with salt and pepper, garlic powder, onion powder, turmeric, and dried oregano.
- Preheat grill to medium heat. Add chicken to grill and cook, flipping occasionally, until the chicken is cooked completely through. The internal temperature should reach 165 degrees F.
- Assemble the salad by adding remaining ingredients to a salad bowl. Toss with the Greek dressing and top with grilled chicken.
