Easy, one bowl recipe for the best ever Paleo Banana Bread Muffins. Loaded with chocolate chips and walnuts!

- 2–3 ripe bananas, peeled
- 3 eggs
- 1/4 cup maple syrup
- 1 teaspoon vanilla
- 1/2 cup almond butter
- 1/4 cup coconut flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/2 cup walnuts, chopped
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350 degrees and line a muffin tin with liners.
- In a large bowl, add the bananas and mash with a fork.
- Add eggs, maple syrup, vanilla, and almond butter to the bowl. Mix to combine.
- Add the coconut flour, cinnamon, nutmeg, baking soda and powder, and salt. Mix to combine.
- Fold in the chopped walnuts and chocolate chips.
- Fill muffin tins with batter.
- Optional: Top each muffin with a few chopped walnuts and sliced banana.
- Bake for 30-35 minutes.
