These paleo banana bread muffins are a healthy twist on the classic banana bread, baked into muffins! Free of gluten, grains, refined sugar, and dairy, these muffins are loaded with good for you ingredients and packed with protein.

They’re perfect for meal prep and so healthy you can even enjoy them for breakfast!

Paleo Banana Bread Muffin Ingredients + Why They Are Healthier

This recipe uses classic banana bread ingredients with a few healthier swaps to make them Paleo and dairy-free.

  • Bananas – Necessary for making banana bread!
  • Eggs – This recipe uses 3 eggs. I have not tried to substitute flax eggs for this recipe, but feel free to give it a try!
  • Maple Syrup – Sweetens the muffins and keeps this recipe refined sugar-free.
  • Vanilla Extract – This adds a classic hint of vanilla flavor to the muffins.
  • Almond Butter – Check your almond butter to ensure there are only two ingredients: almonds and salt. Watch out for nut butters that have added oils and sugar!
  • Coconut Flour – Binds the muffins together and is loaded with healthy fiber.
  • Cinnamon and Nutmeg – Classic warming spices that flavor the muffins.
  • Baking Soda – Helps the muffins to rise.
  • Walnuts – Contain several components that have antioxidant and anti-inflammatory effects (1). Feel free to substitute with another nut variety, or leave the nuts out altogether.
  • Chocolate Chips – Banana bread is just better with chocolate chips, in my opinion! Feel free to leave the chocolate chips out if you prefer.

How to Make Paleo Banana Bread Muffins

This recipe is so simple, perfect for meal prep, and only requires one bowl!

  • Mash the bananas in a large bowl
  • Add the wet ingredients
  • Mix in the dry ingredients
  • Fold in the walnuts and chocolate chips
  • Fill muffin tins with batter
  • Bake at 350 degrees F for 30-35 minutes

Easy, one bowl recipe for the best ever Paleo Banana Bread Muffins. Loaded with chocolate chips and walnuts!


Ingredients

  • 23 ripe bananas, peeled
  • 3 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1/2 cup almond butter
  • 1/4 cup coconut flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup walnuts, chopped
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees and line a muffin tin with liners.
  2. In a large bowl, add the bananas and mash with a fork.
  3. Add eggs, maple syrup, vanilla, and almond butter to the bowl. Mix to combine.
  4. Add the coconut flour, cinnamon, nutmeg, baking soda and powder, and salt. Mix to combine.
  5. Fold in the chopped walnuts and chocolate chips.
  6. Fill muffin tins with batter.
  7. Optional: Top each muffin with a few chopped walnuts and sliced banana.
  8. Bake for 30-35 minutes.
