Easy, one bowl recipe for the best ever Paleo Banana Bread Muffins. Loaded with chocolate chips and walnuts!


Ingredients

  • 23 ripe bananas, peeled
  • 3 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1/2 cup almond butter
  • 1/4 cup coconut flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup walnuts, chopped
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees and line a muffin tin with liners.
  2. In a large bowl, add the bananas and mash with a fork.
  3. Add eggs, maple syrup, vanilla, and almond butter to the bowl. Mix to combine.
  4. Add the coconut flour, cinnamon, nutmeg, baking soda and powder, and salt. Mix to combine.
  5. Fold in the chopped walnuts and chocolate chips.
  6. Fill muffin tins with batter.
  7. Optional: Top each muffin with a few chopped walnuts and sliced banana.
  8. Bake for 30-35 minutes.
