Snickerdoodle cookies are traditionally full of sugar, flour, and butter. This chai spiced snickerdoodle recipe is gluten-free, grain-free, vegan and naturally sweetened, making these cookies a much healthier option!

Plus, they’re flavored with a homemade chai spice!

Ingredients and Substitutions for Chai Spiced Snickerdoodles

  • Coconut Oil – This helps keep the cookies moist and fluffy.
  • Coconut Sugar and Maple Syrup – I chose a combination of coconut sugar and maple syrup for this recipe. Together they create a brown sugar flavor in these cookies.
  • Vanilla Extract – This adds a classic hint of vanilla flavor to the cookies.
  • Almond Flour – The almond flour provides some density to these grain-free cookies and keeps them from spreading.
  • Arrowroot Starch – This helps to keep the cookies nice and soft. You can substitute tapioca starch if you don’t have arrowroot on hand.
  • Chai Spice Mix – A homemade chai spice mix adds all the flavors of fall to these cookies.

What is the difference between almond flour and almond meal?

Almond flour is made by finely grinding blanched almonds. The almond skins are typically removed before grinding, which is why almond flour is lighter in color compared to almond meal. Generally, almond flour is better for baking, which is why I recommend it in this recipe.

How to Make Chai Spiced Snickerdoodles

  • Mix the homemade chai spice mix and set aside
  • Combine cookie ingredients in a large bowl
  • Make the chai spiced sugar. Mix 1 tablespoon of chai spice mix with 3 tablespoons of coconut sugar and combine. Set aside for rolling the cookies.
  • Bake! Measure out 1 tablespoon of dough at a time and roll into balls, then place on a parchment paper-lined baking sheet. Roll each cookie in chai spiced sugar, flatten slightly with the palm of your hand, and bake for 10 minutes at 350 degrees. Then, cool and enjoy!

Ingredients

Chai Spice Mix
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cloves
  • 2 teaspoon ground cinnamon
  • 3 teaspoon ground ginger
Cookies
  • 1/3 cup coconut oil
  • 3 tabelspoons coconut sugar
  • 3 tabelspoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cup almond flour
  • 1/4 cup arrowroot starch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 tsp chai spice mix 

Chai Spiced Sugar

  • 3 tablespoons coconut sugar
  • 1 tablespoons chai spice mix

Instructions

  1. Mix the homemade chai spice mix in a bowl and set aside.
  2. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
  3. In a medium bowl combine coconut oil, coconut sugar, maple syrup, vanilla extract, almond flour, tapioca or arrowroot flour, baking soda, cream of tartar, salt and chai spice mix. Stir to combine. 
  4. In a separate bowl, make the chai spice sugar by stirring together 1 tablespoon of chai spice mix with 3 tablespoons of coconut sugar and combine. Set aside for rolling the cookies.
  5. Using a cookie scoop or spoon, measure out 1 tablespoon of dough and roll into an evenly shaped ball. Roll each ball into the chai spice sugar mixture.
  6. Place each ball onto the baking sheet about 2 inches apart. Flatten slightly with your palm or the bottom of a glass. Bake for 10 minutes. Transfer cookies to a wire rack to cool completely. 

Notes

  • The cookies don’t spread very much so you will need to pat them down before baking. You’ll also want to take these out of the oven when they’re just baked through. You don’t want to over bake or they’ll end up dry.
  • Arrowroot/Tapioca starches are interchangeable. Use whatever you have on hand!
