Try this immune boosting soup the next time you’re craving an extra dose of greens. It’s the perfect nourishing replacement for your favorite green smoothie during the fall and winter months.

After too much indulgence my body craves fresh, clean, simple meals and all the GREENS! This nourishing recipe always comes to the rescue. I even like to make a double batch to keep on hand in the freezer.

Green Goddess Detox Soup Ingredients and Substitutions

The nutrient-dense ingredients and antioxidants in this green goddess soup recipe help your body detox and fight off germs during cold and flu season. Plus, it’s gluten-free, vegan, and tastes delicious!

  • Onion and Garlic – Allium vegetables, like onion and garlic, contain antioxidants that fight inflammation and can decrease the risk of cancer (1). Garlic also has powerful antimicrobial, antiviral and anti-fungal properties (2).
  • Broccoli – This nutritional powerhouse is packed with vitamins, minerals, fiber, and antioxidants. A member of the cruciferous veggie family, broccoli helps lower inflammation, fight cancer (3), and is wonderful for maintaining healthy hormones by helping your body process estrogen.
  • Kale – This cruciferous veggie is rich in antioxidants and vitamins A, K, and C. Feel free to use any other leafy green in place of kale. Swiss chard would be great!
  • Zucchini – This low-carb veggie is high in essential nutrients like potassium, manganese, and antioxidants like vitamin C and vitamin A.
  • Vegetable Broth – Full of vitamins and minerals, vegetable broth serves as the base for this soup. Feel free to use bone broth in place of vegetable broth if you aren’t on a vegan diet. Bone broth will provide added gut-healing benefits thanks to the collagen.
  • Coconut Oil and Coconut Milk – Coconut oil is my cooking fat of choice here. It contains healthy fatty acids and is known to have antimicrobial effects that can ward off harmful pathogens like bacteria, viruses and fungi (4). The coconut milk provides a luscious, creamy texture without any added dairy.
  • Lemon Juice – Lemon is wonderful for detoxification and is high in Vitamin C. The juice adds a light, citrus flavor to the soup.
  • Fresh Herbs– Herbs have powerful protective polyphenols with potent antioxidant and anti-inflammatory effects (5). Feel free to customize the herbs in this recipe to your liking.

Can you Freeze Green Goddess Detox Soup?

Yes, this immune boosting soup recipe is perfect for meal prep! I like to make a double batch and store leftovers in the freezer. Store the soup in a freezer safe container like wide-mouth Mason Jars or Weck Jars. To reheat, microwave one serving for about 4 minutes, stirring halfway through, or simmer on the stove over medium heat for about 10 minutes.

Blending Tips

  • Make sure your vegetables are cooked through and fork tender. This step will ensure a creamy, blended soup!
  • Choose your blending device. An immersion blender or high-speed blender works great. I prefer using a stick blender to keep this a one-pot meal.
  • If using a high-speed blender, leave the top portion of your blender open for the steam to escape. Blending hot ingredients can cause them to expand and add pressure, popping open the lid. Hint: I may or may not know this from experience!

How to Make Green Goddess Detox Soup

Aside from chopping all the veggies, this soup is quick and very simple to make! Pro Tip: Buy your veggies pre-chopped to make this recipe even easier!

  • Saute the onions and garlic until tender. Generously season with salt and pepper.
  • Add the vegetables and broth and simmer. Next you’ll add the broccoli, zucchini, and kale along with the broth and simmer for 10-15 minutes, allowing the vegetables to cook through.
  • Stir in the remaining ingredients. Stir in the herbs, lemon juice and coconut milk.
  • Blend the soup.
  • Taste for seasoning and garnish. Topping suggestions include fresh herbs, micro greens, coconut milk or cream, or toasted nuts.

Ingredients

Scale
  • 2 tablespoons coconut oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 zucchini, diced
  • Kale, 1 bunch chopped
  • 2 heads broccoli, cut into florets
  • 4 cups vegetable broth 
  • Juice of 1 lemon
  • Fresh parsley (I used a large handful)
  • Fresh dill (I used a large handful)
  • 1/4 cup coconut milk
  • Salt and pepper to taste

Topping Ideas

  • Chopped fresh herbs
  • Micro greens
  • Lemon juice
  • Coconut cream
  • Toasted pine nuts or pumpkin seeds

Instructions

  1. In a large pot, heat coconut oil over medium-high heat. Add onions and garlic and saute for 3-5 minutes until soft. Season with salt and pepper.
  2. Add zucchini, broccoli, kale and vegetable broth. Cover and simmer on low for 15-20 minutes, until vegetables are cooked through.
  3. Add lemon juice, fresh herbs and coconut milk. Blend with immersion blender or transfer to a high-speed blender and blend until smooth. You can add more broth or coconut milk for a thinner consistency.
  4. Season with salt and pepper to taste, ladle into bowls and garnish with desired toppings.
