Almond milk is a delicious dairy-free alternative to milk. It’s perfect for blending into smoothies or pouring over granola, and makes the perfect frothy lattes. And, if you haven’t tried homemade almond milk yet, you’re missing out!
With no gums, preservatives, or nasty ingredients, this homemade almond milk recipe is much healthier than many store-bought options.
And, it tastes better too! By making your almond milk at home, you have the option to boost the flavor with yummy add-ins and can choose to either sweeten or unsweetened your milk (more on this below)!
What do you need to make homemade almond milk?
All you need are almonds, water, a high-speed blender (like Vitamix), and a nut milk bag. Yep, that’s it!
Is soaking nuts better for you and how long should you soak them?
Foods that are high in phytic acid, like nuts and seeds should be soaked before they are eaten for optimal digestion. Why? Soaking the nuts removes the anti-nutrient compounds that are difficult to digest and makes the nutrients more bio-available for proper absorption in the body. I recommend soaking the almonds overnight for best results.
Ways to flavor almond milk
After making the almond milk, pour it back into the blender and boost the flavor with these optional add-ins:
- 1 teaspoon of vanilla extract
- 1 tablespoon of sweetener like maple syrup or honey
- 2 tablespoons of cacao
- 1 pitted date
- 2 cups of fresh fruit (strawberries work great!)
How long does homemade almond milk last?
Homemade almond milk will last for about 4-5 days in the fridge. This is why I recommend making a small batch, unless you’re going to drink it quickly. Trust me, this recipe is so simple – It’s easy to whip up a fresh batch whenever you need to.
What can you do with leftover almond milk pulp?
After making homemade nut milk, you will be left with the nut milk pulp. Don’t throw it away – There are a number of uses for it!
- Gluten Free Breadcrumbs: Spread the nut milk pulp onto a parchment-lined baking sheet and dry it at your oven’s lowest temperature. Once the pulp is dry, add any seasonings you would like and store in the fridge to use in recipes.
- Add to baked goods in place of almond flour: You may need to experiment with adding more or less liquid since the consistency is not quite the same as almond flour.
- Add to energy bites for an extra fiber boost
