This pumpkin spice grain-free granola is the perfect combination of your favorite fall spices along with maple syrup, coconut oil, almonds, pecans and pumpkin seeds. 

Most store-bought granola options are full of sugar and typically contain grains, which can cause digestive upset for many. This homemade gluten-free, grain-free granola recipe is naturally sweetened, and is loaded with healthy fats, omega-3 fatty acids and protein.

Pumpkin Spice Granola Ingredients and Substitutions

  • Almonds and Pecans – Nuts provide the perfect crunch while adding healthy fats and protein. Feel free to use your favorite nuts in this recipe. Walnuts would be a great substitution.
  • Pumpkin Seeds – It’s hard to image a fall recipe without pumpkin seeds. They are loaded with antioxidants that may prevent many chronic conditions (1) and are full of nutrients like manganese, magnesium, and iron.
  • Flax Seeds – are rich in dietary fiber and high in omega-3 fatty acids.
  • Coconut Oil – contains healthy fatty acids and is known to have antimicrobial effects that can ward off harmful pathogens like bacteria, viruses and fungi (2).
  • Maple Syrup – provides the perfect hint of sweetness. Feel free to use honey if you aren’t vegan.
  • Vanilla Extract – adds flavor to the granola.

How to Make Homemade Pumpkin Spice Granola

  • Mix all ingredients together
  • Bake for 30 minutes
  • Keep an eye on it – Stir half way through to ensure the granola bakes evenly and doesn’t burn
  • Enjoy fresh from the oven or store in an air-tight container

Description

This pumpkin spice grain-free granola is the perfect combination of your favorite fall spices along with maple syrup, coconut oil, almonds, pecans and pumpkin seeds.  It’s naturally sweetened, and is loaded with healthy fats, omega-3 fatty acids and protein.


Ingredients

Scale
  • 1 cup raw almonds
  • 1 cup raw pecans
  • 1 cup pumpkin seeds
  • 1/4 cup ground flax seed
  • 4 tablespoon coconut oil, melted
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper.
  2. Place your nuts in a food processor and pulse until chopped into small pieces. Place the nuts in a large mixing bowl.
  3. Add remaining ingredients to the mixing bowl and combine. Spread the mixture onto the baking sheet.
  4. Roast for 15 minutes, stir and roast for an additional 15 minutes until golden brown.
  5. Remove from the oven and allow to cool before storing in a storage container.

Notes

  • If you don’t have a food processor – spread the nuts onto a cutting board and chop into small pieces with a knife
